Chocolate chia seed mousse

3 tbsp chia seeds
1 tbsp peanut butter
1 tsp vanilla essense
pinch of salt
1 – 2 tbsp raw cocoa powder
1 tbsp cacao nibs*
A few stevia drops to sweeten
Blend all the ingredients in a food prosessor. Decorate with chopped nuts or orange rind. Chill in the fridge for a couple of hours. That’s it! Delicious and healthy!
Serves 2 – 4
* Cacao nibs are the crushed seeds of the cacao plant from which chocolate is made.
